Happy Birthday, Lamington Fingers (gluten free, dairy free, sugar free, Low fodmap, paleo)

Yesterday was 29th birthday, the final year of my twenties :-(. I spent the day with my beautiful kiddies then topped it off by enjoying a lovely dinner with the family. And of course a birthday cake or a Lamington finger or two, as i choose this for my Birthday cake this year. Im not real big on chocolate cakes.

What you’ll need
Sponge cake
3 eggs free range
1/2 cup cornflour (tapioca flour if Paleo)
3/4 cup almond meal
1 tsp baking powder
1/2 tsp vanilla powder
2/3 cup macadamia oil
4 tbls rice malt syrup

Chocolate Sauce
2 tbls coconut oil softened
2 tbs cacao powder
2 tbls rice malt syrup
2-3 tbls almond milk
Desiccated coconut

Raspberry Jam
1/3 cup frozen raspberries thawed
2 tbl chia seeds
2 tsp rice malt syrup

  • Pre heat oven to 160
  • Combine macadamia oil and rice malt syrup in a bowl and whisk until well mixed set aside
  • Measure out corn flour, almond meal, baking powder and vanilla in a bowl, using a fork stir until combined
  • Using electric beaters on high, beat the eggs for 5 mins until thick and foamy
  • Gradually add the oil mixture while still beating
  • Gently fold the flour mixture in with a spatular until combined
  • Pour into a line square 22cm tin
  • Bake for 20 mins or until cooked in the middle
  • Set aside to cool completely
  • Once cool trim the edges and gently slice the sponge in half  for the jam

Raspberry Jam

  • Blend the thawed raspberries i just used a hand held blender
  • Add the chia seeds and rice malt and stir
  • Let the mixture sit for about 20 mins to thicken
  • Then spread on the sponge cake
  • I didn’t spread enough on mine so i slapped some jam on while i was eating the lamington yummo

Chocolate Sauce

  • Soften the coconut oil in the microwave
  • Add the cacao powder, rice malt syrup and almond milk and gently whisk or stir to remove any lumps
  • Cut the sponge into finger size pieces and spread the chocolate sauce on each side
  • Roll on a plate of desiccated coconut to cover
  • A little fiddley but very tasty

These babies didn’t long pretty much all gone on the night, store in an air tight container in the fridge

One Day Juice Cleanse

Its great to give your digestive system a break from time to time. You don’t always have to do a 3 or 5 day juice cleanse a simple 1 day cleanse is a great way. Or even just incorporating a juice/smoothie a day you will begin to see benefits not only in your skin, hair and nails but you sleep and inner health.

I decided to do a 1 day cleanse just to give my body a break and to be honest i don’t have the time or commitment at the moment to do a 3 day cleanse though i would like to. (Maybe later on down the track)

Being on the Low Fodmap diet i am limited in fruits and veggies that i can have so i made sure i picked safe food combinations. Recipe’s down the bottom 🙂
