Chocolate Coconut Milk Ice Cream (gluten free, dairy free, fructose friendly, low fodmap, paleo, vegan, raw vegan, clean eating)

Its coming into ice cream weather and i have been trailing lots of different flavours such a hard job he he. So simple to make and the kids love getting involved just as much as eating them when they are ready.IMG_1527

This recipe is adapted from The Detoxinista

What you’ll need
makes x4 mini

200ml coconut milk
2 tbl cacao powder
1-2 tsp rice malt syrup (or other sweetner)
1/4 tsp vanilla powder
a tiny pinch of salt

  • Combine all ingredients in a food processor or blender and mix until smooth
  • I always taste and adjust if needed, a little more sweetner/coconut milk etc
  • Pour into icecream moulds you could also use plastic cups
  • If using paddle pop stick wait around 30 mins after the icecreams have beeen placed in the freeezer to gently place the sticks
  • Pop into the freezer and leave until firm around 3 hrs

You can serve as is or add some chocolate sauce and nuts

Chocolate Sauce

2 tbls coconut oil softened
2 tbl cacao powder
1-2 tsp rice malt syrup

  • Careful not to over melt the coconut oil as it will make the rice malt syrup split
  • Mix all ingredients until well combined and smooth

Dip the icecream into the chocolate sauce then cover with chopped walnuts, puffed quinoa, cinnamon buckinis, crushed almond anything you like.
