Choc Chip Bites

Yesterday we played around making muesli bars, i had two types on the go one for the kids seed/nut free  for little miss as she is not able to chew seeds yet and one packed with seeds and nuts. I wasn’t entirely happy with the seedy bar so ill just post the kids one today.


What you’ll need

This makes 6 small squares

1 tbls chia seeds
3 tbls water
1/2 cup puffed quinoa
1/2 cup oats ( i just used quick oats)
1/4 cup desiccated coconut
2-3 tbls rice malt syrup
1/4 tsp Cinnamon
Choc chips or cacao nibs for the top

  • Pre heat oven to 150
  • In a small bowl make up your chia gel by adding the chia seeds and water, stir and set aside to  thicken
  • In a small saucepan add the quinoa oats and rice malt syrup on a low heat, stir until combined and take off the heat
  • Add the coconut, 2 tbls chia gel, cinnamon stir until well combined
  • Line a small square baking tin and spread mixture out firmly

  • Stick some choc chips on top and pop into the oven for 10-15mins until golden remove from oven and gently cut into bite sized pieces. I popped mine back in for another 5 mins just to darken the inner edges up

My kids are fine with oats it’s me who can ‘t tolerate them,  you could substitute the oats for cornflakes or quinoa flakes. Use caca nibs for a dairy free sugar free option or dark organic chocolate.


Set aside to cool, will firm up once cooled
