Lemon Coconut slice (gluten free, dairy free, fructose friendly, low FODMAP)




Thanks to Cooking with Nothing for this yummy lemon slice inspiration.

What you’ll need

5 tbl coconut oil
3 tbl rice malt syrup
2 cups shredded coconut unsweetened
1 cup almond flour
pinch of salt
2 egg whites (save the yolks for the filling)

3 eggs + 2 egg yolks
6 tbl rice malt syrup
1/3 cup lemon juice about 2 lemons
1 tbl zest of lemon
1/3 cup almond flour

Dust with desiccated coconut

  • Preheat the oven to 170°
  • Melt the coconut oil in a saucepan over low/med heat
  • Add the rice malt syrup, shredded coconut, almond flour and salt
  • Stir until everything is combined and remove from heat
  • Separate the egg whites and keep the yolks for later
  • Add the egg white to the pan while stirring. Keep stirring fro about a minute the mixture should be quite sticky
  • Line a 30cm x 20 cm baking dish with baking paper
  • Pour the mixture into the the dish and flatten out with your hands, spatula or the back of a spoon the press down firmly to make it compact
  • Bake for 10-12 minutes and remove from oven

Start prepping the lemon filling while the base is cooking

  • In a large bowl, beat the eggs + egg yolks with an electric beater until frothy
  • Add the rest of the ingredients, beat for 2 more mins
  • Pour the mixture over the baked base in the baking dish
  • Bake for 15-20 minutes
  • Or until the edges are light brown and the centre is set
  • Let cool before slicing or eating (its worth the wait)
  • Cut into pieces and dust with desiccated coconut

  1. I just made this and it is delicious! Not too sweet. It’s a fresh, tart tasting lemon slice. I actually doubled the filling ingredients because I wanted it to be nice and tall. But also had to bake for an extra 10 minutes to cook it properly.
