Zucchini and Haloumi Fritters (gf,ff,lowfodmap)

I try to stay away from dairy but today i was craving it, so i went with my body and indulged.
I wanted something quick and easy as i had a busy night ahead prepping for my little girls 1st birthday party which is this Sunday so i came up with these tasty fritters they ticked all the boxes and Dave even approved.

What you’ll need

1 zucchini grated
1 egg
60g haloumi cheese grated
fresh parsley
1 tbl chia seeds
1/4 cup cornflour or almond meal
spring onion green part only
handful of spinach

I didn’t add salt as haloumi is quite salty on its own
Grate your zucchini and haloumi into a bowl
Chop up your spinach, parsley and spring onion and add to the bowl
Add the egg, chia seeds
Slowly add the cornflour or almond meal to thicken the mixture you may not need it all judge as you go
Mix altogether and squish into balls mixture will be quite wet but will hold together when cooked
Lay on a plate and pop in the fridge for 20 mins to help set
Heat a pan on med heat with some oil
Slide the patties into the pan a few at a time
Cook for about 2 min each side until golden

Serve warm with a yummy salad
