Today was spent with sticky chocolate coated hands mmmm mmm, protein ball making day. I love a good protein ball, the combinations are endless and so simple to make. They are a great snack, treat, mini meal or a 3pm sugar craving fix minus the bad sugar.
Here are just two of my Protein ball recipes one i cant eat 😦 as i don’t tolerate dates being a Fructose malabsorber though some people can.)
Delicious Date Protein balls
4 dates soaked (not essential but helps soften the dates)
1/4 cup walnuts
1/4 cup almonds
1 tbl coconut oil melted
1 tbs chia seeds
1/2 cup coconut shredded
2 tbl cacao powder
Combine all ingredients in a food processor
Roll into balls
Coat with desiccated coconut, sesame seeds, chia seeds, ground nuts or anything else you like
Store in an air tight container in the fridge for up to 4 weeks they never stay around for that long in my house!
Fructose Friendly Protein Balls
This is something i am still working on, suffering from Fructose Malabsorbtion you are limited on dried fruits i like to stay away from them. So i had to come up with a base to replace the dates in texture and hopefully taste.
desiccated coconut to coat
Soak chia seeds in coconut water for 10 mins,until the mixture becomes thick and gel like
Add a small handful of walnuts, sunflower seeds, shredded coconut, to the food processor along with 1 tbl cacao powder, 1/2 tsp -1 tsp rice malt syrup and the chia gel.
Process for a min or so, i like mine a little chunky
Taste taste and taste add more of what you think it might need
The mixture will become quite moist but will harden in the fridge
Roll mixture into balls
Coat with desiccated coconut and refrigerate
