Jaffa Bites (gluten free, dairy free, sugar free, fructose friendly, raw vegan)

Easter has inspired me to play around with chocolate treats. So much fun and extremely tasty. These are best frozen over night, so the jaffa mix can become fudge like. Or if you are like me and cant wait you can eat them when they are set still taste just as good but a little gooey and messy to get out of the moulds.

Ingredients

Jaffa fudge

  • 1/4 cup cashews soaked 20 mins
  • 1/2 zest of an orange
  • 1 tsp cacao powder
  • 1 1/2 tsp rice malt syrup
  • dash of fresh orange juice (optional)

Cacao Sauce

  • 2 tbls virgin coconut oil melted
  • 1 heaped tbls rice malt syrup
  • 1 1/2 tbl cacao powder

Blend all the Jaffa ingredients in a food processor until a thin smooth paste
Place in the fridge to thicken while you make the cacao sauce
Combine all the sauce ingredients in a bowl, mix well
line the bottom of chocolate molds, patty tin, mini cupcake tin with some of the sauce
Freeze for 10 mins
Remove from the freezer add some of jaffa mix to the moulds
Top the moulds with the remaining cacao sauce
Freeze overnight
