2 Simple Sunday Meals

    My poor little Princess is sick and she is quite the sook. I have been pumping her with lots of fruit ,veggies and herbs to try help her little system fight the bug.

IMG_7570 We all love a bit of chicken soup when we are sick, so thought i would do a Chicken and Corn Soup although it turned out to be more of a stir fry looking dish either way the kids were happy.

Ingredients

  • 1 chicken breast skinned and thinly sliced
  • 300ml Chicken stock i use my own
  • 1 cup Corn frozen
  • 1 tsp Ginger finely choped
  • 2 stems Spring Onion diced (i only use the green part)
  • Dash of Tamari (soy sauce)
  • 1 Tbs Coconut oil
  • 1 serve Vermicelli Noodles Gluten free
  • salt and pepper to taste

Place the chicken stock in a saucepan with the corn, ginger, spring onion and soy sauce.  Simmer for 5mins. Heat a frypan and melt the coconut oil, add the chicken and stir fry until white all over Add the chicken and the vermicelli noodles to the stock saucepan and cook for 5 mins Sprinkle with spring onion and serve

Beck’s Sang Choy Bow

This is something quick and easy, as i was just cooking diner for myself tonight and didn’t want to be cleaning up a mess. I ended up not even having to use cutlery……BONUS! photo-8

    • 1 Skinned Chicken thigh fillet thinly slice
    • 1 tsp Ginger diced
    • 1 tbs Coconut oil
    • A dash Tamari Soy sauce
    • Spinach
    • Red Capsicum diced
    • Cucumber roughly chopped
    • Zucchini roughly chopped
    • Cos lettuce
    • Spring onion diced
    • Corriander diced
    • Fresh lime juice

Chop all your ingredients Heat a fry pan and melt the coconut oil, add chicken, soy sauce and ginger and cook until chicken is tender. Take the fry pan off the heat, toss in the chopped up veggies and combine Spoon the mixture onto the Cos lettuce cups and drizzle with fresh lime juice. Enjoy Beck xox
