Not only are Walnuts tasty they are full of omega 3 fatty acids, minerals, vitamins and antioxidants.
I love basil and it makes a great pesto to add to pasta dishes, on pizza bases, breads, biscuits and with eggs.
1 large bunch of fresh basil
1/4 cup walnuts
1/4cup Olive Oil
Salt and pepper
- Combine walnuts, basil and olive oil in a food processor and blend.
add more olive oil if needed
- Salt and pepper to taste
Use straight away or store it in the fridge for 5 days in an airtight jar just drizzle olive oil on top making sure all pesto is covered.
Or freeze into ice cube trays then transfer into a zip lock bag then grab a couple out when needed.
