Everyone needs some quick dinner meals for when you just cant be bothered.
Last night was one of those nights I just had too many other things to do so I whipped up some tasty tuna patties, they were a hit.
1 Medium size sweet potato
185g tin of Tuna in springwater
2 eggs cage free
1/2 cup corn frozen
1/2 cup peas frozen
1 cup Spinach
A handful of Flat leaf parsley
1 Tbs Chia seeds
2 pieces of Spring onion I only use the green part
Salt and pepper
Cornflake crumbs i make my own instructions below
Peel and cut the sweet potato then put in a steamer until soft. Once soft mash and let cool.
Roughly chop your spinach, parsley and spring onion.
Place sweet potato, tuna drained, corn, peas, spinach, parsley, spring onion and 1 egg into a bowl. Mix until combined. I like to add Chia seeds for added fibre and they help soak up some of the liquid, if the mixture becomes to wet. Season with salt and pepper
Roll tuna mixture in to balls
I made 8 large sized ones you can make any size you like.
Set up 3 bowls for coating your tuna patties
1. Containing the cornflour
2. 1 egg lightly beaten
3. Cornflake crumbs I season with salt and pepper
now you are ready to coat your tuna patties.
1. Coat them lightly with cornflour ,if you coat to much they can become floury
2. Dip in egg mixture
3. Lastly coat with the cornflake crumbs
I place my patties in the fridge after coating them all for atleast 10 mins, it helps the crumbs to set on the pattie.
It’s time to cook
Heat your pan add some olive oil, I have the oil about 1cm deep.
Place your patties in and cook till golden on both sides
Whip up a nice side salad and dinner is served.
They also make an easy left over lunch for the next day
To make your own cornflake crumbs super easy
Buy some gluten free cornflakes check they don’t have too much added sugar
Pop them in a food processor and process till small crumbs and your done
I make a big batch and store them in my pantry in an airtight container.
