One of the many things to make with left over Almond pulp!

There are many things you can make with the left over almond pulp from your almond milk.

A favourite in our house is my Blueberry Muffins

 Gluten Free Dairy Free Sugar Free Blueberry Muffins 

Makes 6

  • 1 cup Almond Meal (sometimes i use half  blanched almond meal to add a different texture or if i don’t have enough pulp.)
  • 2 Tbls Chia seeds
  • ½ Tsp Baking Powder
  • 2 Eggs
  • 1/4 cup Coconut Oil
  • 1/8 cup Rice Malt Syrup
  • 1 cup Blueberries frozen work best
  • Cinnamon to taste
  • Shredded Coconut to sprinkle on top


  • Pre heat the oven to 160 °
  • Line a muffin tray with baking paper
  • Melt the Coconut Oil
  • Combine all the ingredients except coconut in a bowl and mix together to make a thick mixture.

    Chia seeds soak up to 9 times their weight in liquid so if the mixture becomes too dry just add more coconut oil 🙂

  • Fold in the Blueberries
  •  Scoop mixture evenly in to muffin tray sprinkle top’s coconut and place in oven
  • Bake for 30 minutes or until golden
